Monte Veronese DOP d’allevo
Monte Veronese “d’Allevo” is made from semi-skimmed cow’s milk from one or two successive milkings. The blue outer coating indicates an ageing period that varies from 90 days to two years. There is also a version of Monte Veronese d’Allevo produced solely using milk from the summer pastures where the cows spend the months between May and October. This cheese is a Slow Food Presidium.
How to enjoy it
Sliced thinly and accompanied by a Campanina apple chutney.
Minimum ageing 3 months.
