Smoked cow’s milk ricotta


This delicious cheese product belongs to the tradition of mountain grazing on the slopes of the Lessini range. It is made from the whey which is a by-product of the processing of raw-milk Monte Veronese cheese, with the addition of unskimmed milk. The surface of fresh ricotta is salted and the cheese is placed in a special chimney and smoked. There is also an exquisite spicy version, obtained by adding chilli flakes to the surface.
