Smoked cow’s milk ricotta
This delicious cheese product belongs to the tradition of mountain grazing on the slopes of the Lessini range. It is made from the whey which is a by-product of the processing of raw-milk Monte Veronese cheese, with the addition of unskimmed milk. The surface of fresh ricotta is salted and the cheese is placed in a special chimney and smoked. There is also an exquisite spicy version, obtained by adding chilli ﬂakes to the surface.

Grated or ﬂaked over raw meat, cooked vegetables, pasta dishes of game.
