When the mixture for salamis was being prepared at home, before ﬁlling the cases, the women would cook a small portion of meat to check it was correctly seasoned. Hence the name “Tastasal”, which translates as “taste for salt”. The mixture in our Tastasal contains lean pork topside mixed with a small amount of trimmed pancetta, salt and pepper.
