Veja is a chalky blue cheese with a firm texture. Made solely with cow’s milk, this is one of Corrado Benedetti’s most emblematic products. In the maturing cellars at Croce dello Schioppo, the cheeses are processed with white grape pomace and moistened with sweet white wine. The result is a creamy cheese, spicy yet balanced, with excellent persistence on the palate.
